Laura J. Kruskall
Biography
Laura J. Kruskall is the director of 51³Ô¹ÏºÚÁÏ's Nutrition Sciences program, which is housed within the School of Integrated Health Sciences. She is also the founding director of the 51³Ô¹ÏºÚÁÏ Nutrition Center and leads the dietetic internship program.
Kruskall, who joined 51³Ô¹ÏºÚÁÏ in 1999, created the university's nutrition sciences educational programs. She teaches courses on human, sports, and medical nutrition, and additionally has expertise in exercise science, weight management, and anti-inflammatory eating. Her research interests include the relationship between vitamin D and bone health in active individuals and athletes, and the effectiveness of educational community nutrition programs.
A registered dietitian nutritionist and a board-certified specialist in sports dietetics, Kruskall holds a certification in adult weight management from the Academy of Nutrition & Dietetics. In addition to her duties at the university, Kruskall is a member of the editorial board for American College of Sports Medicine’s Health & Fitness Journal, an ACSM-certified exercise physiologist, a health and wellness collaborator at the Cleveland Clinic Lou Ruvo Center for Brain Health, and a nutrition consultant and practitioner for Canyon Ranch Spa + Fitness in Las Vegas.
